If you’ve been following along with the blog, you know that I’ve recently lost a ton of weight over the past year after my second baby was born. A lot of people I run into comment on my weight loss, and a joke that I commonly hear is that I must not be eating any food at all!
I credit my weight loss to my changed eating habits and my daily miracle drink. People think that I’m “dieting” and don’t eat anything, but I actually eat more food now than I ever did! I just eat different food – healthier foods, and lots of them. This isn’t a diet for me, it’s a lifestyle change. And my consistent weight loss and stability over the past year has proven to me that I’ve finally found the answer.
However, I’ve heard that comment often enough that I figure I should take some time to show you exactly what I’m eating, how much, and how I craft my meals.
In this video, I demonstrate how I throw together a healthy and easy lunch. I do something similar to this each day that I’m home and able to cook! And if I’m not home, I’ll prep it the night before and take it to work with me.
And I eat every last bite – sometimes licking the plate clean because it’s that tasty.
I’m still learning video editing, so I don’t have the pictures of the final meal in the video because I didn’t know how to insert them at the end. Until I learn that, I’ve included the pictures of the final meal above!
