As followers of the blog know, I recently lost a ton of weight over the past year. (You can read about my whole post-pregnancy weight loss journey here). I checked into the hospital to give birth to my second baby weighing in around 186 lbs. After a lot of the initial water weight faded, I was hovering post-baby around 160 pounds – much heavier than is healthy for my small 5’2” frame.
And I didn’t feel good! My weight has yo-yoed my entire life and I decided that it was time to change once and for all. I’m now a little over a year post-baby and I weigh 112 pounds. I have never been this small in my entire life. I’ve never had an easier time keeping the weight off. And I’m rarely hungry – which I think is a miracle!
I credit it all to my changed eating habits and my daily miracle drink. People think that I’m “dieting” and don’t eat anything, but I actually eat more food now than I ever did! I just eat different food – healthier foods, and lots of them. This isn’t a diet for me, it’s a lifestyle change. And my consistent weight loss and stability over the past year has proven to me that I’ve finally found the answer.

In this video, I demonstrate how I throw together a healthy and easy family dinner. And this is something that even the kids will eat! To save you time, I’d linked one of my favorite kitchen gadgets (Food Chopper on Amazon) for getting a quick, fine chop on all the veggies we eat. You’ll see me use it frequently throughout the video. It’s an integral part of my kitchen!
And here’s the pictures of the finished product! It was delicious, just as I suspected it would be, and all four of us ate significant portions – kids included! Rob and I included toast with jam and a glass of wine to round out the meal.
